
Stéphan Martinez, a restaurant owner by training with a passion for the environment, was one of the pioneers of vermicomposting in the catering industry. In 2007, he created the Moulibox, a mini-composter designed to recover bio-waste using earthworms. In 2012, in response to changing regulations, he launched Moulinot Compost et Biogaz, a company dedicated to collecting and converting food waste into biogas and fertiliser. Today, he is Chairman of Moulinot and Director-Chairman of the GNI's sustainable development commission, actively committed to an ecological transition in the restaurant and hotel industry. His ambition is to make Moulinot a key player in bio-waste management on a national scale.
