There, she offers a cuisine inspired by Nordic and Mediterranean influences, surprising and original, highlighting local and seasonal ingredients.
Originally from Apulia, Francesca draws inspiration from her childhood memories and incorporates ancestral techniques such as smoking and curing while exploring Asian flavors.
Committed to a sustainable approach, she prioritizes short supply chains and strives to reduce waste through zero-waste practices.
