Marie-Victorine Manoa is more Lyonnaise than the Fête des Lumières! She is also one of the most talented and sharpest chefs of her generation: she speaks fluently the language of cervelle de canut and quenelle de brochet, shines on television, and raises concerns about fishery resources with her brother, a freshwater biologist. Her résumé is as long and powerful as the Rhône: she worked at Noma (Copenhagen) under René Redzepi and DOM (São Paulo) with Alex Atala before joining Alain Ducasse at the historic Aux Lyonnais, a traditional bouchon in the French capital. While awaiting the imminent opening of her own restaurant, she once again graces the Lyon culinary scene with her charisma. A "2.0 mère lyonnaise" in the making?
