Yannick Alléno is one of the greatest French chefs. In 2008, he founded the group that bears his name to unite people around his vision, embodied in his 17 establishments with a total of 15 Michelin stars. He has laid the foundation for a truly distinctive cuisine: Modern Cuisine. Inspired by Auguste Escoffier, Chef Alléno has revived the art of sauces, crafting them like perfumes through techniques such as extraction, fermentation, and cryoconcentration.
In 2014, Yannick Alléno took over the concession of Pavillon Ledoyen in Paris, where he created three restaurant concepts: the three-star gastronomic restaurant, Alléno Paris; the two-star sushi counter, L'Abysse; and the relaxed one-star gastronomic counter, Pavyllon.
