Margot Lecarpentier, also known as Margot Combat, is a new-generation French mixologist. A former lawyer at Sony Music in New York, she made a radical conversion by opening her first bar, Combat, in Belleville in 2017. She stands out for her ethical and inclusive approach, advocating local, seasonal, vegan and alcohol-free cocktails. Recognised by Alain Ducasse, she designs the cocktail menus for his establishments around the world. Her style is characterised by a quest for simplicity and naturalness, emphasising sour and acidic flavours as creative alternatives to classic ingredients.
