
Mauro Colagreco, chef at the Mirazur*** in Menton, is a pioneer of responsible, circular cuisine. Since 2006, he has cultivated a close relationship with nature, following the cycles of the seasons and the Moon. His restaurant, voted best in the world in 2019, is a 5-hectare estate dedicated to plant-based, sustainable cuisine. Committed to the fight against single-use plastic, he obtained ‘Plastic Free’ certification in 2020. As a UNESCO ambassador for biodiversity and vice-president of Relais & Châteaux, he promotes environmentally-friendly gastronomy.
